Cookie Sheets, Sheet Pans, Liners & Baking Mats
Cookie Sheets are flat, for easy removal of cookies. One side usually has an upturned lip, for ease in picking it up. It also gives the flat sheet more stability.
Sheet pans, or Jelly Roll pans, are baking sheets with sides that are about 1″ high. They can be used for cookies, cakes, and other baking tasks.
Pan Liners and Baking Mats keep food from sticking to regular surface pans without having to grease.
You can also bake foods in envelopes made of parchment paper, to keep all the flavor and juices together.
Paper resists temperatures up to 455°F, so it can be safely used in the oven under most circumstances. However don’t place paper liners under a broiler or near an open flame.
Silicone, fiberglas, and other such baking mats have a higher heat resistance, and are re-usable. They also provide a non-slip and non-stick working surface that makes them convenient for other kitchen tasks as well.
Quilters and other crafters use liners made with fiberglass to protect surfaces, such as keeping fusible from sticking to the ironing board or the iron, and easily removing glue drips.
